Salmon Baked with Herbs
If you would like to slow cook the steaks in the oven, place salmon in a foil-lined shallow pan, and spread some garlic butter and herbs over it. Parsley, dill, rosemary or marjoram work
well, also a little lemon or lemon pepper. Bake for 45 minutes or so at 350 (until the fish is flakey).
Sweet Salmon
If you have a sweet tooth, mix a cup of brown sugar and tablespoon of mustard together. Add a little soy sauce to form a glaze. Cover the steaks with this mixture in a shallow foil-lined pan.

Pete's Smokin' Salmon Brine
| 2-1/2 cups | Water |
| 1 cup | Soy sauce |
| 1/2 cup | Apple cider vinegar |
| 3 Tbs. | Worchestershire sauce |
| 1/3 cup | Sugar |
| 1/3 cup | Brown sugar |
| 1/3 cup | Sea salt (non-iodized) |
| 6 cloves | Garlic (pressed) |
| 1 Tsp. | Garlic powder |
| 1 Tsp. | Onion powder |
| 1 Tsp. | Chinese 5-spice |
| 1 Tsp. | Paprika |
| 1 Tsp. | Black pepper |
| 1 Tsp. | Cayenne |
Heat and stir all ingredients together in a saucepan
on warm just enough to get everything to dissolve. Cool.
Soak fish overnight. Rinse fish. Set on rack to dry. Smoke 8 hours with 3 pans of chips.
